Easy Apple Walnut Cake

While the vast majority of the recipes on this website are healthy, some recipes (particularly the desserts), fall into the “happy” category. Such is this easy apple and walnut cake.

It’s certainly healthier than other desserts out there, but at the end of the day, it’s cake. I wanted to share because it’s SO easy to make and something our family enjoys making together. It’s also dairy-free, which is always a plus for us since me and my daughter tend to have issues with dairy.

So just enjoy sparingly :).

My favorite recipes are ones that are few in ingredients and in steps. This one hits those marks! It’s a cake my mom started making after many years of living in the Midwest, and it goes perfectly with a cup of tea or coffee. It’s just sweet enough, and the walnuts give it a satisfying crunch.

Here’s what you need:

  • 1 cup of oil (avocado oil would be a healthier choice but use what you have)
  • 1 ½ cup of sugar
  • 3 eggs
  • 2 cups flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 cup chopped walnuts
  • 1 cup peeled and chopped apples

Preheat the oven to 350°F and grease a 9×9 inch pan. 

Mix the oil, sugar and eggs until well blended. In a separate bowl, mix the flour, salt, cinnamon and baking soda. When the wet ingredients are well-mixed and creamy, slowly fold in the dry ingredients.

Finally, add in the walnuts and chopped apples. Add the ingredients into your greased pan and bake for 35-40 minutes (top should be light brown across the entire cake including the middle).
