Nothing beats a good one-sheet meal, especially on weeknights when you’re short on time and maybe lacking the desire to cook at all. This chicken & potato dish is super simple, just toss it all in a pan and pop it in the oven. My kind of dish! In Turkish it is called tavuklu patates.
You’ll see in my photo of this dish that I’ve cut the potatoes into smaller pieces but when my husband or mother-in-law make this, they cut the potatoes into longer, french-fry style pieces. You do whatever you prefer.
While usually made with chicken, sometimes I’ll make this dish using a turkey kielbasa if that’s what I have on hand. Either way, it’s delicious!
Here’s what you need:
- 1 lbs chicken thighs
- ~3-4 small potatoes, cut into pieces
- 2 cups chopped tomato
- 1 bell pepper
- 1 small onion
- 3 cloves of garlic
- ½ cup olive oil
- 1 tbsp pepper paste (or tomato paste + ½ tsp crushed red pepper)
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp cumin (optional)
The preparation for this dish is simple. Set your oven to 375 degrees. Place all of your ingredients into a large bowl and mix thoroughly. It’s best to do this with your hands to ensure it is mixed enough. Then place into a large sheet pan (sometimes I mix directly in the sheet pan so I have one less dish to wash).
Cover with foil and bake for 35 minutes. Then remove the foil and cook for an additional 5 minutes.
