If you’re a cauliflower lover I’ve got another super simple, delicious recipe to share! My local health food store used to offer this in their deli and I would grab a container to go during my lunch break, occasionally bringing some home to my husband. He loved it so much we started making this copycat version at home!
Enjoy it warm or cold, fresh or the next day. Not only is it delicious, it’s a healthy side dish that you can feel good about eating.
As it comes to the crushed red pepper I mention in the ingredients list, you can opt for cayenne pepper or any spicy pepper you like (or you can skip it). I usually used crushed Turkish red pepper or even gochugaru (crushed Korean red pepper) as that’s usually in our cupboard!
Here’s what you need:
- 1 head of cauliflower
- 1 bulb of garlic
- ⅓ cup of olive oil
- 1 tsp salt
- ½ tsp black pepper
- ¼-½ tsp crushed red pepper (add more or less to your liking)
Preheat your oven to 375 degrees. Cut your cauliflower head into small pieces and place into a bowl. Peel your garlic and add to the same bowl.
Next, add the oil and spices to the bowl and mix throughly with your hands (you can use gloves if you don’t like to get your hands dirty!)
Place into a medium-sized roasting pan. Then, pop into the oven and bake for 50 minutes.
That’s it! So simple and super delicious. Eat it as a snack, or as a side to a protein. It will match a variety of different flavor profiles!
