If you’re like me, coleslaw is a welcome addition to any sandwich, burger, taco or hot dog. I am a fan of most coleslaw, but I prefer to have it with a little kick. This spicy coleslaw has jalapeno and sriracha to add some fire to whatever dish you’re pairing with the slaw.
In this recipe I’ve listed out the ingredients to prepare fresh; however, feel free to just grab a bag of pre-cut coleslaw ingredients and just make the dressing!
One other note – the coleslaw will taste best if you let it sit overnight. If you don’t have that kind of time, try to at least let it sit for 1 hour to soak up the flavor of the dressing.
Here’s what you need:
- ½ small head of white cabbage
- ½ small head of purple cabbage
- 2 carrots
- 4 green onions
- 1 jalapeno
- ½ cup mayo
- 1 tbsp sriracha
- 1 tbsp rice vinegar
- 1 tbsp sugar
- 1 tsp salt
- ½ tsp black pepper
Start by thinly slicing all of your vegetables and placing in a medium bowl. Next, you can make the dressing in a separate bowl or add the dressing ingredients (mayo, sriracha, rice vinegar, sugar, salt and pepper) directly to the bowl of sliced vegetables. Mix very well, then cover and place in the refrigerator for at least one hour.
Serve as a side dish or to top off your bulgogi tacos!
