Here’s what you need for this dish:
- ~1 lb salmon
- 1 tbsp doenjang
- 1 tbsp soy sauce
- 1 tbsp oligodang
- 1-2 cloves garlic
- ½ tsp black pepper
- ~2-3 carrots (multi-colored if desired)
- ~3 purple potatoes
- 1 medium onion
- ½ cup olive oil
- 1 tsp salt
- 1 tsp black pepper
- 2 garlic cloves or 1 tsp garlic powder
- Optional: 1 tsp gochugaru
- 1 cup yogurt and 1-2 tbsp sriracha
- 2-3 green onions
- Roasted sesame seeds and black sesame seeds
Preheat your oven to 400 degrees fahrenheit. In a small mixing bowl add the doenjang, soy sauce, oligodang, garlic (finely chopped), and black pepper. Mix well, and pour over salmon. Make sure to coat the salmon well, and set aside.
Peel your purple potatoes and chop into small pieces. Peel your carrots and chop your carrots into the same size as the potatoes. Also chop your onion into similar size chunks. Coat olive oil, salt, black pepper, garlic, and gochugaru. Mix well with your hands, and pour onto a baking sheet.
Place potato mixture into the oven and let cook for 10 minutes before adding the salmon. If your oven is large enough, cook next to each other. If not, place the salmon on the top rack. Cook for another 10 minutes, then switch the oven to broil at 400 degrees. Cook for another 5 minutes, then remove the salmon. After another 3-5 minutes, remove the potato mixture.
Garnish with chopped green onion, sesame seeds, and drizzle the spicy yogurt sauce before serving. Enjoy as is, or with a little rice.
