Air-Fried Gochujang Carrots

Carrots are a wonderful and versatile vegetable that can be used in sweet, spicy and savory dishes. They’re not only delicious, they’re also incredibly nutritious — full of fiber, antioxidants and vitamins.

These air-fried gochujang carrots are my go-to when I want a fast snack or side dish that is healthy, but will also satisfy my craving for something spicy!

Gochujang is a spicy hot pepper paste used in many Korean dishes (learn more about gochujang here). While before you could only find this ingredient in Korean markets, this staple ingredient in Korean cooking has become increasingly more present in mainstream grocery stores across the U.S. Next time you’re in the “Asian” foods section, pick some up so you can try a variety of different Korean meals!

If you don’t like spicy foods, you can easily skip that ingredient and it will still be very delicious. You could also easily replace it with a different sauce, such as pesto.

Here’s what you need:

  • ~7-8 carrots (or a small bag of mini carrots)
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp garlic powder
  • 1-2 tsp gochujang
  • 1 green onion

To start, peel and chop your carrots so they are all around the same size with medium thickness. If your carrots are all different sizes, the big ones won’t cook enough and the little ones will burn. If you’re using baby carrots, cut just once in half.

Add all of the remaining ingredients into a bowl and mix well with your hands. You want to ensure there are no clumps of gochujang and that it is mixed very well. If not, the sauce will burn in the air fryer.

Start your air fryer and set to 400 degrees fahrenheit, 10-13 minutes. While the carrots are cooking, chop one green onion.

Top with the chopped green onion before serving, and enjoy!
