Looking for a quick and easy appetizer? You can’t go wrong with this bruschetta recipe that is bursting with crisp, delicious flavor using very few ingredients.
This was a small plate served in one of my husband’s past restaurants that was very popular. There, it was served with sliced garlic bread. You can opt for the same, or serve with plain toasted bread or crackers.
You can use any kind of tomato! Pictured below are campari tomatoes because that is what was on sale at the market during my last trip.
As it comes to feta cheese, we usually use a Turkish brand made with goat milk (see here on Amazon but you can find it much better priced at a Turkish or Mediterranean market!)
This is all you need:
- 2 cups chopped tomatoes
- ½ cup of garlic & herb balsamic vinaigrette (see recipe here)
- ½-¾ cup of crumbled feta cheese
Wash and cut your tomatoes and place into your serving bowl. Mix your dressing well and pour over the tomatoes. Top with crumbled feta and serve with your choice of bread or crackers.
Doesn’t get much easier than that! And it is sure to delight your family or guests. Enjoy!
Bruschetta With Feta Cheese
Ingredients
- 2 cups chopped tomatoes
- ½ cup of garlic & herb balsamic vinaigrette (see recipe here)
- ½-¾ cup of crumbled feta cheese
Instructions
