Beef Hummus – A Healthy Mediterranean Meal

This and its vegetarian-cousin “Veggie Hummus” (see recipe here) were very popular menu items at the Turkish restaurant where my husband used to head the kitchen. 

If you’re limiting starches in your diet, it’s the perfect dish that is both filling and delicious. If you’re not, then by all means enjoy this with some toasted pita!

You will need to have hummus already made and I recommend making it at home. Feel free to use our recipe which was also served in this same restaurant.

You’ll also need a couple tablespoons of diced tomatoes in a light puree (you can purchase like this), or you could use marinara sauce, or even just add a teaspoon of tomato or pepper paste to diced tomatoes.

Finally, to garnish you’ll need pine nuts and raisins. If you don’t have pine nuts, you can sub for walnuts. This final step is crucial to the dish, as the crunch from the nuts and the sweet from the raisin is what really pulls all of the flavors together in a memorable way.

So here’s what you need:

  • 1 cup of hummus for each plate
  • 1 pound strip steak
  • 1 red pepper
  • 1 orange pepper
  • 1 green cubanelle pepper
  • 2 cloves of garlic
  • 2 tablespoons of diced tomatoes in light puree
  • 2 tablespoons your preferred cooking oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp oregano
  • Garnish: Pine nuts & raisins

When it comes to peppers, you could just opt for 1 red pepper and 1 cubanelle pepper and skip the orange pepper. I am a pepper fan, and I like the color of it on the plate, so I opt to add in the orange pepper as well. 

Cut your peppers & onions into thin strips, as well as your beef. Crush and chop your garlic. 

Heat a large saute pan on medium-high heat. When hot, add in the oil followed by the onions, garlic and meat. Cook until meat is mostly browned, then add the peppers. Cook for another 2 minutes and add the salt, pepper, oregano and tomatoes. Cook for another 1-2 minutes and remove from heat.

Take your hummus and scoop into the center of the plate. Using a ladle or spoon, start moving in a circle motion from the center, spreading the hummus wider on the plate and leaving space in the center to place the beef and peppers. When there’s a little hole in the center of your nest of hummus, place them in the center of the plate. 

Finally, sprinkle the pine nuts and raisins. Serve as is or with pita bread.
