When I indulge in a sweet treat, I like for it to at least have some wholesome value. That’s why I love these cookies. Is it low calorie? Nope. But it has a lot of fiber thanks to the oats and nuts, and if you can’t or won’t eat gluten, you’re in the clear. You also have the option to make this dairy-free as well.
Even if you’re not on a special diet or have absolutely no food allergies or aversions of any kind, these cookies are worth making because they are easy to whip up and super scrumptious.
INGREDIENTS:
2 cups of rolled oats
1 cup almond flour
½ cup coconut flakes
2 tsp cinnamon
½ tsp salt
¾ cup honey or maple syrup
¼ butter cup or coconut oil
1 tsp vanilla
¾ cup craisins
¾ cup pecans or walnuts
DIRECTIONS
- Preheat the oven to 350°
- In a large bowl, mix together the rolled oats, flour, cinnamon and salt. Set aside.
- In a separate bowl, mix the butter/coconut oil, honey/maple syrup and vanilla.
- Fold the dry ingredients into the wet ingredients.
- Fold in the craisins/dates and nuts.
- Roll into balls slightly bigger than a walnut shell and place onto a cookie sheet lined with parchment paper. Slightly flatten with your hand or a fork.
- Bake for 10 minutes, then let cool on a rack if you have one.
Like most of the dishes or baked goods I make, I always give a recipe extra points when they are kid approved. These cookies passed the test!
There are a few places where you have the option to substitute ingredients and still have them turn out well. If you can’t do dairy, go for the coconut oil. If you don’t have any honey on hand, maple syrup works well, too!
